JNCK Bakery embarked on an 15-month Innovate UK-funded project, Nutritionally Enhanced, Sweet Bakery for All, aimed at developing HFSS-compliant, low-sugar bakery products. This initiative focused on reformulating popular baked goods while maintaining taste and texture, addressing the rising demand for healthier snack options. The project gained significant traction, leading to commercial partnerships with major retailers.

My Role as Monitoring Officer

As the Monitoring Officer, I played a pivotal role in ensuring the project stayed on track, adhered to compliance requirements, and maximised its potential. My responsibilities included overseeing risk mitigation strategies, optimising financial allocations, and supporting commercialisation efforts. Through structured oversight and regular intervention, I ensured that challenges were swiftly addressed.

  • Prototype Development: Achieving HFSS compliance for muffins was difficult due to caramel and frosting formulations. I facilitated iterative improvements and resource reallocations.

  • Manufacturing Scale-Up: Scaling up brownies for mass production required ingredient adjustments. I helped streamline alignment between developers and manufacturers.

  • Packaging and Shelf-Life Optimisation: Engaged technical packaging consultants to enhance the shelf life and packaging design for broader retailer acceptance.

Project Overview

Scarlet Therapeutics is pioneering bioengineered red blood cells (tRBCs) to treat metabolic disorders such as hyperammonemia and hyperoxaluria. The project aimed to establish a preclinical proof-of-concept to pave the way for clinical development and investor readiness.

My Role as Monitoring Officer

I played a crucial role in monitoring research progress, financial management, and commercialisation strategies. My oversight ensured that key milestones were met while managing technical risks effectively.
